I was expecting Imu to look way more inhuman, so the fact that he's human-looking and just a straightforwardly-strong type felt a little off from what I wanted.

Massive overstatement. Even though Luffy is on the weaker end of the Yonko (Buggy aside), he could already overwhelm Kizaru as Nika — which means Kizaru straight-up loses to the Yonko. Luffy only reaches Yonko-level strength AS Nika; the other Yonko put out that Nika-tier power constantly, with no time limit.
過言すぎる。ルフィが歴代四皇では弱い方(バギーを除く)にも関わらず、ニカで黄猿を圧倒できてた時点で黄猿は四皇には普通に負ける。ルフィはニカになってようやく四皇並みの実力であり、そのニカ並みの強さを時間切れなく常時発揮できるのが他の四皇。

It's the same with the Holy Knights: because they have "immortality" / "revert" properties, they barely ever need to think about taking or dodging a hit, and they're rarely attacked in the first place — so I figure they're just weak on defense.
神の騎士団もそうなんだけど「不死」「戻る」性質が有るから攻撃を(受ける)(躱す)を考える必要があまり無く、その存在から己が誰かから攻撃される機会も少ないから守りに関しては弱いのかと思う。
